Starters...

Poached Fine de Claire oysters, blue meat and green meat radishes, shallot and lovage pickles, celery-branch vinaigrette, fresh nasturtium.

Soft asparagus, whelks cooked in court-bouillon, watercress coulis, herb mayonnaise, puffed quinoa.

Homemade foie gras, date and lemon condiment, Jerusalem artichoke cream, Malvasia gel, sweet spice babka. (Supplement 5 €) 

 

Main courses...

 

Roasted pollack with butter and seaweed, celeriac mousseline, marinière juice foam refreshed with ginger, tangy lemon gel.

 

Beef siphon, Comté potato siphon, roasted eryngii mushrooms, peated meat juice.

 

Duck fillet, thyme polenta, orange-glazed carrot tops, young turnips, Apicius sauce.

 

 

Sweets...

 

Banana dome, kiwi insert, Dulcey chocolate and almond crisp, banana and kiwi coulis with verbena, yellow kiwi.

 

Golden apple compote with cinnamon, Granny Smith apple salsa with cider vinaigrette, candied apple with dill, almond crumble, vanilla whipped cream.

 

Dark chocolate half-sphere with poached pear, pear Bavarian, poached pear brunoise,fresh pear, crumble, coffee and honey coulis, lime and grapefruit zest.

 

Plate of cheeses from the “Crèmerie des Carmélites”.

 

And of course always available, our chocolate fondant with a salted butter caramel heart and its cream cheese ice cream.
